INGREDIENTS

  • 1/2 gallon of whole milk [association: nourishment]

  • 1/4 c of lemon juice, white vinegar, or vinegar of choice 

  • salt


ITEMS NEEDED TO CRAFT

  • big bowl (to put under the strainer)

  • Storage container for finished cheese

  • fine mesh strainer (at least 6” in diameter) cheese cloth 

  • pot (big enough to fit 1/2 gallon of milk)


How to Make The Ritual Recipe Nourishing Farmers Cheese

  1. Set your intention

  2. Pour the 1/2 gallon of milk into your pot.

  3. Heat milk on medium heat—stirring your intention in occasionally to not scold the milk until the milk begins to foam a little on top.

  4. Take the milk off the heat and mix in your vinegar or lemon juice.

  5. Let your milk and vinegar cool for 10 minutes—you will begin to see the curds separate from the whey

  6. Put your strainer in your bowl (line with cheese cloth if using)

  7. Pour your pot of curds and whey into the strainer

  8. Lightly rinse your curds and press them slightly. Allow them to continue to drain for at least 10-30 minutes, but you can let the cheese drain longer if needed or desired

  9. Put cheese into a clean bowl, salt to taste, and lightly knead your salt into cheese

  10. Press cheese firmly into the storage container of your choosing with your intention.

  11. Allow cheese to firm in fridge

  12. Enjoy this ritual recipe of nourishing farmers cheese with your favorite crackers, on toast, or crumbled onto a dish of your choosing!
